Talks & Tastings with Maria Elia

Following a wonderful night at the end of February, for the first ‘Talks & Tastings’, Maria and Mike are delighted to announce the date for the next instalment, on Thurs April 25th.

We’ll be indulging you in another offering of seasonal British seafood, over a 5 course tasting menu, selected by Mike and cooked and demoed for you by Maria, with all the accompanying tips and knowledge you need to replicate at home.

Maria’s incredible passion for cooking, coupled with her own unique Mediterranean-influenced recipes, will be matched with Mike’s ‘seafood with storytelling’ and his knowledge of the catch , which will connect you all the way from the kitchen to the quayside.

This time, our chosen seasonal species to include: local wild bass from the Suffolk Heritage Coast, new season Cromer crab, exquisite Newlyn hake and plump St Austell Bay mussels.

The evenings are designed to be informal, informative, and fun, with conversations around food an essential part of each event.

A unique and intimate experience, with limited participants, price includes substantial tastings and carefully selected wine.

Welcome to Spring Tide

Tide embodies all that describes the constant ebb and flow of the seasons and the native bounty that abounds in the shallow seas surrounding the British Isles.

Fresh fish and shellfish, caught in their prime, in peak condition and landed from boats we know and work with from ports, harbours, coves and beaches, both here in coastal Suffolk and around the shores of the UK.

We have worked with our inspirational chef, Hannah Christensen, to create seasonal menus designed to showcase the incredible quality of our native species and to reflect their provenance in the ‘Net To Plate’ story which is founded on sustainability, traceability and understanding why, where, when and how the catch was landed.

An entirely new concept in seafood dining, Tide will bring into focus seafood that is often primarily destined for export or even discarded and will seek to educate, enthuse and inform our customers in the abundance and availability of fish and shellfish that originate from some of the most responsibly fished water in the Northern hemisphere.

TIDE - beautifully prepared, cooked and constructed seafood dishes inspired and designed by us to celebrate our British fishing industry and its communities.

We will be operating four seasonal dining experiences a year based on the availability and seasonality of the fish and shellfish being landed to our shop.

Please note that we are able to seat 30 people per evening. Due to much interest before the event we have added an extra date of Saturday 25th March 2023

Join us at the Station Hotel, Framlingham, from midday onwards, for a celebration of British Seafood from around our shores.

We’ll be serving freshly shucked Butley Creek oysters , roasted Orford lobster, wood fire cooked Fowey scallops and poached Peterhead langoustines. No need to book, just rock up and we’ll pleased to welcome you to our afternoon of seafood heaven.

In the pub you can also book a table, to enjoy some of our more local seasonal specials - Felixstowe Ferry slip sole, Lowestoft skate wing and Suffolk Heritage Coast wild bass all served with new local potatoes and house salad.

For those of you who know me, you’ll appreciate I like to talk about our native seafood a lot 🤔 #understatement

So, if you’d like to sample the finest UK fish and shellfish in a beautiful setting and hear me tell the ‘net to plate’ story, then come and join me and top seafood chef @jacklevine23 @suninndedham on Friday March 11th.

I’ll be talking about my ‘A Passion for Seafood‘ journey and describing how our extraordinarily diverse and wonderful, wild fish and shellfish are harvested beyond the horizon and brought to us fresh and direct from the boats.

Jack and I haven’t quite finalised the menu yet, but it will be 4 courses with 8 wines for £65/head and I guarantee it’ll be sensational.

On Sunday 26th September, Mike will once again be taking to the stage, this time on his home patch at the wonderful Snape Maltings, on the banks of the River Alde.

Mike will be lifting the lid on the great historical, annual migration of herring down the East Coast of the UK and discussing why this one revered species, termed the ‘Silver Darlings,’ lost favour in the UK and why we should be embracing it once again.

A Passion for Seafood Artisan Fish Sellers specialising in native seasonal British fish and shellfish. Sourced directly from the fisherman, seafood with storytelling will be ‘On The Road’ and attending this exclusive market event. Lobsters, crabs, shrimps & langoustines along with other fresh catch will be available to buy to eat on site or to take home for you to prepare.

This year's unique event...

Over 50 Suffolk producer stalls individually spread across the stunning grounds of Snape Maltings. We will retain as much of the Festival spirit as possible by providing some musical entertainment and a selection of street food and refreshments. The event is all about supporting our producers and giving them an opportunity to showcase their wares. Unfortunately we will not have any live chef demonstrations or masterclasses but the Maltings, along with its shop and cafe will be open.

At Linda’s kind invitation, I’m delighted to be leading this course, where you’ll learn about sustainable fishing and how to prepare and cook locally caught shellfish. With guidance from us both, you will pick and dress your own crabs and learn how to present them ready to serve in their own shells and cook another crab dish to take home in addition to your dressed crab. I’ll also show you how to get the most from a lobster and you’ll cook your own lunch of fresh mussels in a delicious sauce. Tea/coffee/welcome cookies and lunch are provided, along with all ingredients and materials, recipe sheets and aprons. Please bring a cool box to take home your creations in peak condition.

These popular excursions are a great way of exploring the Suffolk Coastline and learning about the sea life that inhabits our shallow waters. We’ll catch, cook and eat our shrimps right on the beach and taste this wonderful shellfish species in its own environment.

Silver Darlings - rediscovering the Herring. 

Guild members CJ Jackson and Mike Warner present an evening celebrating this forgotten, but historically important and nutritious food. 

UK Herring stocks are abundant and sustainable and yet have fallen off the radar for our consumers. The ultimate ‘superfood,’ herring fisheries have established and supported coastal communities for generations, yet are now much neglected and overlooked, as more popular, imported species constitute 80% of our consumption and deny our fishermen an important seasonal opportunity. 

Mike and CJ are on a mission to rekindle the nation’s love for this ‘King of the Sea’ and will demonstrate the simplicity, value and flavour of the herring in its many forms.

Herring used to be a protein staple before the second world war with 12000 fishermen employed in its harvest. Now this superfood is hardly recognised…….
